Curried Baked Beans

This inexpensive and quick recipe is the ideal healthy dish that works great as a super quick meal or as a delicious healthy side dish. A healthy and quick recipe that cooks up this quickly cannot be beat.

Cooking Time: 6 min

Ingredients
  • 1 teaspoon light oil or butter substitute
  • 1/4 cup raisins
  • 1 onion, finely chopped
  • 1/2 cup peanuts
  • 1 teaspoon curry powder
  • 16 ounces can vegetarian baked beans
Instructions
  1. Put onion, oil and curry powder in a medium-sized casserole dish and cook in the microwave, covered on high for 2 minutes.
     
  2. Add the raisins, nuts and baked beans.
     
  3. Reduce power to 50 percent and cook for 3 - 4 minutes or until hot.
Notes

You make this ahead of time, standing will develop the curry flavour, just re-heat when required. Serve on toast, or as a taco filling with grated cheese.
