Grilled Fillet and Chickpea Salad

For an out of the ordinary salad, try Gorton's recipe for this Grilled Fillet and Chickpea Salad. It has some Mediterranean flair with the tangy lemon juice and olive oil dressing. Use it as a salad topper or even as a party appetizer.

Serves: 4

Preparation Time: 10 min

Cooking Time: 5 min

Ingredients
  • 2 Gorton's All Natural Garlic Butter Grilled Fillets (1 box)
  • 1 can of chickpeas, drained & rinsed
  • 1 cup carrots, shredded
  • 1 small red pepper, diced
  • 1/2 cup red onion, chopped
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Prepare Gorton's All Natural Garlic Butter Grilled Fillets according to package instructions.
     
  2. Break up cooked fillets with fork, combine with remaining ingredients and serve immediately.
