Almond Fruit Salad Surprise

If you want a simple fruit salad recipe that could be used as a main course, try this Almond Fruit Salad Surprise recipe. The surprise is the delicious flavor that the surprising ingredient rice gives to the dish.

Serves: 4

Ingredients
  • 2 cooked brown rice, cooled to room temperature
  • 1 orange, peeled and sliced
  • 1/2 cup red grapes, halved
  • 1 kiwi, sliced
  • 1/3 cup slivered almonds, toasted
  • 2 tablespoons orange juice
  • 1 tablespoon soy sauce
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon minced fresh ginger
Instructions
  1. Combine rice, orange, grapes, kiwi fruit, and almonds in large bowl.
     
  2. Blend orange juice, soy sauce, oil and ginger in small bowl; pour over rice mixture and toss lightly. 
     
  3. Prepared poppy seed dressing may be substituted for dressing.
