Low Fat Banana Almond Muffins

Low-Fat Banana Almond Muffins are a treat for the senses. You'd never guess that they don't use butter!

Serves: 12

Cooking Time: 15 min

Ingredients
  • 1/4 cup sour milk
  • 1/3 cup softened margarine
  • 2 eggs
  • 2 bananas, mashed
  • 1/2 almond extract (essence)
  • 1 cup whole-wheat flour
  • 3/4 cup sugar
  • 1 1/2 baking powder
  • 1 cup almonds, sliced and toasted
Instructions
  1. Preheat oven to 375 degrees F, prepare pans.
     
  2. Combine wet mix ingredients and mix well.
     
  3. Add the dry mix to the wet mix until just combined.
     
  4. Spoon into pans and bake for 15-20 minutes.
Notes

Yields 12.

Milk may be soured by adding a little lemon juice to it and leaving until curdled.
