Super Cheesy Artichoke Dip

This cheese-filled artichoke dip maybe the best dip recipe because it is full of flavor and much healthier for you than the average recipe for spinach and artichoke dip. Enjoy this dip recipe with some whole wheat crackers.

Ingredients
  • 8 ounces jar marinated artichoke hearts
  • 8 ounces reduced fat cream cheese
  • 1 cup reduced fat mozzerella cheese, grated
  • 1 cup reduced fat Parmesan cheese, grated
  • 1 cup fat free mayonnaise
  • 1-2 green onions (optional)
  • 4 ounces smoked salmon (optional)
Instructions
  1. Combine artichoke hearts, cream cheese, 1/2 cup mozzarella cheese, Parmesan cheese, mayonnaise and green onions and smoked salmon if desired in a food processor and pulse to make it smooth.
     
  2. Pepper to taste (you probably won't need salt). Pour it into a shallow baking dish.
     
  3. Cover with the grated cheese and bake until browned and bubbly, about 30 to 45 minutes.
     
  4. Serve with sliced bread (toasted is good), chips, crackers or pita chips.
