Walnut Rum Meringues

Impress your guests with these Walnut-Rum Meringues. Meringues are light, fluffy and easy to make. There is no butter in these simple sandwich cookies.

Preparation Time: 10 min

Cooking Time: 30 min

Ingredients
  • 1 egg white
  • 1/2 cup confectioner's sugar
  • 2 teaspoons rum
  • 1 teaspoon corn flour
  • 2 ounces walnuts
Instructions
  1. Beat egg white until soft peaks form, gradually add sugar, beat until dissolved.
     
  2. Fold in finely chopped walnuts, sifted corn flour and rum.
     
  3. Drop half-teaspoonfuls of mixture on to well greased lightly-floured oven trays. Allow room for spreading. Bake in a 300 degree F oven 30 minutes.
