Holiday Chocolate Coffee Cake

Do you have a sweet tooth this holiday season? If so, try out this great chocolate coffee cake recipe.

Cooking Time: 12 min

Ingredients
  • 1 cup cake flour, sifted
  • 1/4 cup cocoa
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 eggs or egg substitute
  • 1 cup sugar substitute suitable for baking
  • 1/3 cup coffee, cold brewed
  • 1 teaspoon vanilla
Instructions

Cake

  1. Preheat oven to 375 degrees F.
     
  2. Line jelly-roll pan with waxed paper and cooking spray.
     
  3. Sift flour, cocoa, baking powder, and salt together in a small bowl; set aside.
     
  4. In separate bowl beat egg substitute until thick and creamy. Gradually add sugar substitute, beating constantly until mixture is very thick. Stir in cold coffee and vanilla.
     
  5. Fold in flour mixture.
     
  6. Spread batter evenly in pan.  Bake at 375 degrees F for 12 minutes.
     
  7. Sprinkle kitchen towel with powdered sugar substitute, invert cake onto towel, remove waxed paper and roll cake and towel jelly-roll fashion. Cool.
     
  8. When cake has cooled unroll, spread with filling, reroll.

 Filling

  • 1 1/2 cups reduced fat Cool Whip
     
  • 2 teaspoons instant coffee
     
  • 1/2 cup powdered sugar substitute
     
  1. Combine instant coffee, powdered sugar substitute, and Cool Whip.

Frosting

  • 1 cup semi-sweet carob chips
     
  • 1/4 cup strong coffee
     
  • 1 cup butter substitute
     
  • 3/4 cup light corn syrup or equivalent substitute
     
  • 4 egg yolks or equivalent substitute
  1. Melt carob chips with coffee over hot, not boiling water. Cool.
     
  2. Beat butter substitute in small bowl until light and fluffy.
     
  3. Beat light corn syrup and egg yolks into butter substitute. Stir in cooled carob mixture.
Notes

After the cake has cooled cut it into 3 3-1/2 inch wide strips. Fill then roll in one continous strip, turn sideways so you have a 3-1/2 inch high cake. Frost as usual.

This is a very good recipe for a vertical layer cake.

This looks like a regular two layer cake until you cut into it.
